Cheese, Chilli & Mango Quesadillas

Ingredients.

  • 8 Small Tortillas (or you can you use 4 large if you’d prefer)
  • 1 Ripe Mango, chopped into small pieces
  • 1 Red Chilli, finely chopped
  • 200g Mature Cheddar Cheese, grated
  • Fresh Coriander

Method.

1.) Lay all the tortillas out on a flat surface.

 

2.) Spread the mango pieces across half of each one, top with the chopped red chilli, grated cheese and coriander, then fold in half.

 

3.) We grilled them on a George Forman, but you can fry them on any grill pan until brown on each side and the cheese is melted.

 

4.) Serve with Sour Cream and Guacamole for dipping, enjoy!
