Cheese, Chilli & Mango Quesadillas

Ingredients

8 Small Tortillas (or you can you use 4 large if you’d prefer)

1 Ripe Mango, chopped into small pieces

1 Red Chilli, finely chopped

200g Mature Cheddar Cheese, grated

Fresh Coriander

Instructions

Serves: 4-6
Time: 20 minutes
Difficulty: Easy

STEP 1
Lay all the tortillas out on a flat surface.

STEP 2
Spread the mango pieces across half of each one, top with the chopped red chilli, grated cheese and coriander, then fold in half.

STEP 3
We grilled them on a George Forman, but you can fry them on any grill pan until brown on each side and the cheese is melted.

STEP 4
Serve with Sour Cream and Guacamole for dipping, enjoy!
