In a large bowl, mix flour, baking powder, salt & sugar.
In a medium bowl, whisk milk, egg and melted butter.
Fold the dry ingredients into the wet until combined.
In a large pan over a medium heat, melt 1/2 tbsp butter. Pour 2 lots of mixture into the pan to make 2 pancakes. When bubbles appear (around 3-4 minutes), flip one pancake, top with the cheese mix. Flip the other pancake until cooked and then top the other.
Repeat until the mix is used.
Meanwhile, fry chopped Chorizo (or bacon) to top the cheesy goodness!
