Tomato & cheddar flatbread pizzas

  • 2 Greek style flatbreads or tortilla wraps
  • 200g tomato pizza sauce, passata or tinned plum tomatoes
  • 6 sun dried tomatoes
  • 60g Wyke Extra Mature Cheddar, broken into chunks4 sprigs basil
  • 30g wild rocket
  • Extra virgin olive oil
Method:
  1. Preheat the oven to the highest setting with a large baking tray in to heat up.
  2. Spread the tomato sauce over the top of the flatbreads, leaving 2cm around the edge. Top with the sundried tomatoes and cheddar.
  3. Slide the pizzas onto the preheated tray and cook for 8-10 mins, until golden and bubbly.
  4. Top with picked basil leaves, wild rocket, drizzle of olive oil and serve immediately.
