Tomato & Cheddar Flatbread Pizzas

Ingredients

Serves 2

Takes 15 mins

2 Greek style flatbreads or tortilla wraps

200g tomato pizza sauce, passata or tinned plum tomatoes

6 sun dried tomatoes

60g Wyke Farm Extra Mature Cheddar, broken into chunks

4 sprigs basil

30g wild rocket

extra virgin olive oil

Instructions

  1. Preheat the oven to the highest setting with a large baking tray in to heat up.
  2. Spread the tomato sauce over the top of the flatbreads, leaving 2cm around the edge. Top with the sundried tomatoes and cheddar.
  3. Slide the pizzas onto the preheated tray and cook for 8-10 mins, until golden and bubbly.
  4. Top with picked basil leaves, wild rocket, drizzle of olive oil and serve immediately.
