made the wyke way

At our farm in Wyke Champflower in Somerset, capital of English cheesemaking, we’ve been making our Cheddar cheese and farmhouse butter the same way for over 160 years.

We’ve been England's Cheddar makers since 1861, a title that reflects our commitment to producing authentic English Cheddar. As fourth-generation cheesemakers, we’re proud to carry forward a tradition that our grandmother, Ivy Clothier, nurtured with her original recipes and methods.

We still use the secret family recipe perfected by our grandparents and the same 100-year-old starter culture, and we still mature our Cheddar in wooden boxes kept to the same temperatures. We never cut corners and work with the same care and attention to detail as the generations that came before us.

The result is exceptional Cheddar: creamy, crumbly and nutty because it’s made the way it should be, with craft and respect. It’s also the secret of our wonderfully creamy butter, slow-churned with whey cream. Over the years we’ve won countless awards but what makes us most proud is knowing that if you gave our Cheddar or butter to our grandparents, they’d think they’d made it.

We’re equally dedicated to looking after the land. Clothiers have worked and lived in this beautiful part of the world for centuries and we care for the countryside like it’s part of the family. We’re one of Europe’s most sustainable food producers, using self-generated renewable energy and recycling water, and we work constantly to protect and improve the hills and valleys we love.

We believe that sharing good food is an important part of life, so we make sure that ours is the best it can be: Cheddar and butter made properly, made the Wyke way.
