Cheese, Chilli & Mango Quesadillas

  • 8 Small Tortillas (or you can you use 4 large if you’d prefer)
  • 1 Ripe Mango, chopped into small pieces
  • 1 Red Chilli, finely chopped
  • 200g Mature Cheddar Cheese, grated
  • Fresh Coriander
Method:
  1. STEP 1 Lay all the tortillas out on a flat surface.
  2. STEP 2 Spread the mango pieces across half of each one, top with the chopped red chilli, grated cheese and coriander, then fold in half.
  3. STEP 3 We grilled them on a George Forman, but you can fry them on any grill pan until brown on each side and the cheese is melted.
  4. STEP 4 Serve with Sour Cream and Guacamole for dipping, enjoy!
