Plus any extra ‘pizza toppings’ of your choice (like sweetcorn, ham pieces, mushrooms etc)*you can roast your cherry tomatoes ahead in an oven for an extra boast in flavour. Simply cut in half and pop into an oven proof dish. Drizzle with a little olive oil and a pinch of salt. Then bake for 20 minutes in an oven (fan 180/gas 6).
Method:
STEP 1 In a bowl, mix together the tomato puree and the honey.
STEP 2 On one side of a flour tortilla, spread a good layer of tomato and honey mixture. Add on some cherry tomatoes along with any extra topping. Cover the tortilla with grated cheese and Add a second tortilla over the top.
STEP 3 Heat a large frying pan over a medium heat. Move the tortillas carefully to the frying pan and place in gently. Fry the tortillas for a couple of minutes, gently pressing down on top to make sure everything stays together.
STEP 4 Flip the tortillas over and cook again on the other side until both sides are browned and crispy. Repeat the above for all the tortillas.
STEP 5 You can cut these into ‘triangles’ and serve with some fresh salsa, guacamole or sour cream dip.
